2 medium butternut squash, cut in half, seeded
3 tablespoons butter or grape-seed oil (I use grape-seed oil)
2 eggs (I use large eggs)
1 tablespoon vanilla extract
1 teaspoon cinnamon
¼ teaspoon nutmeg (I use 1/2 tsp)
½ teaspoon celtic sea salt (I use regular sea salt and decrease amount to 1/4 tsp)
- Bake squash in the oven at 350° for 40 minutes, until soft
- Scoop squash out of skin, discarding skin
- Place squash in food processor with butter (or oil), eggs, vanilla, cinnamon, nutmeg and salt
- Puree until smooth and creamy(I do not put it in a food processor and I just mix it all up in a bowl...I don't like doing dishes)
- Place in a 9-inch tart pan or a casserole dish and bake at 350° for 40 minutes (I used a 8x8 glass pan)
- Serve
