Roasted Red Peppers



My friend Megan made these for lunch: So yummy!



Roasted Red Peppers

1 red pepper, sliced in half
1 tomato, sliced
Red onion slices
olive oil
oregano
salt/pepper
Place 1-2 tomato slices in each red pepper half.  Top with several slices of red onion.  Sprinkle with oregano and salt and pepper and then drizzle with olive oil.  Bake at 425 for 25 minutes.
