Menu Planning ~ week of January 8

I always make a list of what I want to make and show my husband so I do not get any complaints later. My goal is to make one new recipe per week and that will be the Black Bean 'n' Pumpkin Chili.
  • Baked potatoes and steamed broccoli. I make a "cheese" sauce in my vitamix for myself while the rest of the family uses sour cream, cheddar cheese, etc.

    • my husband is not super excited about this recipe
  • Stir-fried chicken with creamed corn from Amanda Hesser's New York Times Cook Book
    • my husband loves this recipe. I will post the recipe with pictures
  • Lasagna (I made up a dairy free lasagna using gluten free lasagna noodles)
    • my husband also loves this one so I am allowed to make it again. The rest of my family sprinkles parmesean cheese on theirs afterwards.  
  • Pizza is usually on Fridays I work the night shift since I nap in the afternoon. I may try my own homemade dough this week. I omit the cheese for myself or eat leftovers
  • "Breakfast for Supper." When I work Friday and Saturday nights I love to eat breakfast Saturday evenings before heading back into work. Aiden calls it "breakfast for supper." I'll make eggs and bacon or breakfast enchilada's or gluten free pancakes. 
I try not to plan too far in advance because some days the things I have planned for dinner are not things I want to eat that night.
