Cauliflower Pizza Crust

Yes I ate this entire pizza by myself (gasp! yes I did!)  Some weeks I want to start more of a Paleo diet and get away from the gluten free carbs. I used extra sharp white cheddar cheese. It was aged 2 years so the lactose content is less (The more a cheese is aged the less lactose it supposedly has). Topped with olives, artichokes, spinach, and red peppers. I was in such a hurry to try this I cut it up and ate a piece before I took a picture. The recipe is here and there is a link below.

Paleo Shepherd's Pie

  • PALEO SHEPHERD'S PIE  By Elana

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 5 garlic cloves, minced (I added this myself)
  • 1 pound turkey or pork bacon, cut into 2 inch slices (I omitted) 
  • 2 cups diced carrots
  • 2 cups diced celery
  • 1 pound organic grass fed ground beef
  • ½ teaspoon celtic sea salt (used sea salt)
  • 1 teaspoon black pepper (omitted)
  • ½ teaspoon smoked paprika (omitted)
  • 1 cup chicken broth (omitted) and used 4 oz tomato sauce because I thought the broth would make it have too much liquid
  • 2 large heads cauliflower, trimmed, chopped and steamed until very soft
  • 2 tablespoons olive oil
  1. Heat olive oil in a very large frying pan
  2. Saute onion (and garlic) for 15 minutes until soft
  3. Add bacon pieces to pan and sauté until cooked, about 10 minutes
  4. Add carrots and celery to pan and sauté in bacon fat for 10 minutes until soft
  5. Add ground beef to pan and sauté until brown, just a few minutes
  6. Season with salt, pepper and smoked paprika
  7. Add chicken broth and cook down broth until 60% evaporated
  8. Place cauliflower in food processor and puree with olive oil until smooth (mashed cauliflower, recipe below)
  9. Pour ground beef mixture into a 9 x 13 pyrex baking dish
  10. Pour mashed cauliflower over beef mixture
  11. Bake at 350° for 30 minutes
  12. Serve










Mashed Cauliflower
  • 2 heads cauliflower, washed and cut into large pieces
  • 2 tablespoons olive oil or earth balance buttery spread (I used olive oil)
  • ½ teaspoon sea salt
  1. Steam the cauliflower pieces until very tender
  2. Puree cauliflower in a food processor (I used my vita-mix) add in buttery spread or olive oil and salt
  3. Reheat in a casserole dish in the oven at 350° for 20 minutes
  4. serve
